CSA Week 15

This week's share will lend itself beautifully to being used for crudite platters and/or soups. Funny that those two things are opposites, but in fact this list of veggies goes both ways. Despite the cool weather over the weekend, warmer days will be here again sooner than we'd like so I'll start by getting you inspired for crudite. Anything and everything can be cut up into pieces and used to scoop into a yummy sauce or dip. There are endless possibilities for making dips; a quick google search and you'll find something that catches your attention. This recipe for a green goddess drip just caught mine an I'm likely to make it for dinner tonight. The picture above was posted on instagram by Anastasia Koutsioukis of Mandolin Aegean Bistro last week. They source a lot of veggies from our farm and make the most beautiful and rustic food with it. This week you'll have two brightly colored radish varieties to play with as well as the famously crisp and sweet kohlrabi, beets and our pride and joy of the week, celery!
Celery is often overlooked as a boring vegetable, but it is key to so many flavor profiles. A soup ain't a soup without celery. Caribbean stir fries all begin with celery, onions and red peppers. Celery is a super food and hero in the juicing world. For us as farmers we love this crop for it's resilience and vibrancy out in the field.
Another pretty resilient crop is kohlrabi and just like celery, this guy gets the backseat in veg popularity. Don't ask us why! We love to grow it, love to eat it and love to convince other people to try it. Check out our profile page for kohlrabi where we linked a great recipe guide for kohlrabi.
One last comment for the week; a word on spring onions. Spring onions are not dried, but instead freshly harvested and prone to rot if not stored in the fridge. Use them just like you would regular onions, but keep in mind they are less intense than dried onions. If the green tops are in good shape, you can use them just like you'd use scallions or chives.
