Porto Rico Sweet Potato
Ipomoea Batatas

days to maturity: 100-110 days

harvest notes: harvest tubers and cure them indoors to produce more sugars

If you've ever wanted to grow your own sweet potatoes but haven't due to lack of space, this variety may become your new summer favorite. Porto Rico "bunch" sweet potato  vines will grow small and compact compared to the 15' vines common to other varieties. Above ground, the plant's bushy, heart-shaped foliage is a pleasing dark green, and below ground the sweet potatoes develop a copper-colored skin with a sweet, pink flesh that is delicious when baked.

Sweet potatoes are great summer crops for your raised bed or your food forest. Sweet potatoes will thrive relatively pest free (check the underside of the leaves often for whitefly) and don't mind the heat, humidity and rainfall of summer. They are a very diverse food crop as the leaves can be eaten cooked and then you get a root crop! Fun fact: the more you prune your sweet potato plant above ground (by harvesting and eating the leaves) the more energy your plant will put into making you roots, so by harvesting (and eating) your greens you are also helping increase your root harvest yield.
