We love this colorful purple & magenta stemmed bok choi that Wild Garden Seed in Oregon has cultivated and shared with the gardening community. We see it out perform many other types of greens time and time again in the gardens we tend. Not to mention the plants are absolutely stunning in the garden due to their vibrant stems. Large varieties of bok choi can be harvested at any point of their growth cycle, there is no right or wrong time or way to harvest, however you’ll get the most out of your plant if you wait till the leaves are about a foot long and then harvest just the mature outer leaves, leaving the interior younger leaves to mature for harvest later on. Bok choi is amazingly adaptable in the kitchen and can be eaten raw, added to soups, or added to any type of sautéed greens dish.
