All Bok Chois are heat tolerant enough to grow through our whole annual veggie season (October - May) so if you’re short on space consider either starting or ending your season with patches of asian greens like this one, before or after your lettuce patch goes in (or comes out). Bok Choi & Pac Choi are super versatile in the kitchen, they’re very similar to swiss chard or spinach, and many varieties are actually marketed as “Asian spinach” to make them seem more normal for the average American diner. Large varieties of bok choi can be harvested at any point of their growth cycle, there is no right or wrong time or way to harvest, however you’ll get the most out of your plant if you wait till the leaves are about a foot long and then harvest just the mature outer leaves, leaving the interior younger leaves to mature for harvest later on. Bok choi is amazingly adaptable in the kitchen and can be eaten raw, added to soups, or added to any type of sautéed greens dish.
