Sauerkraut is one of the simplest ways to incorporate lactofermented foods full of gut friendly probiotics into your diet. Before the end of the season we preserve as many cold weather crops as possible and we are excited to share our abundance of sauerkraut with you. Made with green cabbages from Worden Farm and pink himalayan sea salt in a ceramic croc, just like in the olden days.
We like our kraut young, meaning it only fermented in salt for a few days at room temperature before being cooled to slow the process. keeping your kraut "young" means its crunchy, bright, a bit more salty, and not too funky tasting. If you'd like it more mature you can loosen the top of the jar, make sure the solids are under the liquids and leave it on the counter for another day or 2 to allow the flavors to deepen and for it to get a bit "stinkier".
