Spinach should only be planted in the very “depths” of our “winter” because it’s a cold hardy crop that heats the heat. Certain varieties are “slow bolt” and will produce more food during our hot winter before giving up and making flowers, and flamingo is one of them. An asian “arrow head” variety with uniform dark creasy large leaves and good resistance to downy mildew this variety is great for South Florida spinach production.
