Salanova lettuce is our absolute favorite number one salad variety ever! Johnny Select Seed, the agricultural industries favorite seed breeders, bred this variety a few years ago and it’s completely changed the baby lettuce game. Usually, baby lettuce mix is made of the youngest leaves on the plant, and the older ones have to be thrown away because they are too big. But with Salanova petite lettuce heads, all mature leaves are baby in size, so the whole plant can be used for baby mix. Using mature leaves instead of young ones means they are a bit more firm and can hold up better in the fridge and when dressed. Either cut the whole head when its mature, or treat it as a “cut and come again” and just take the outer leaves for your daily salad.
