Amaranth is for sure the easiest green leafy vegetable to grow in Miamis tropical summer. A popular green vegetable in many countries, including many islands of the Caribbean where this plant is famous for Calaloo Seafood Soup. Bright red, variegated, or green leaves are great in stews, stir-fries and soups, having a tangy, spinach-like flavor. Easy to grow in warm weather. Young tender leaves can be eaten raw, older leaves should be cooked. Best used before it flowers, responds well to being heavily trimmed and harvested.
