Join Tiffany and Muriel of Little River Cooperative and Melissa Sosa, head chef at Zak the Baker, for a summer fruit pickling, fermentation and preserving workshop on Saturday July 2nd from 10am-2pm. Now that summer is upon us we turn our attention to the unique tropical bounty that Miami's hottest rainiest season has to offer. If you've ever had a mango tree in your yard you know how productive some of these fruit trees can be: this workshop focuses on creative ways to preserve your tropical fruit bounty. While we all know how to juice, freeze and dry fruit, this workshop will introduce slightly more complex processes like fermented chutneys, vinegars, flavored simple syrups, fruit curds and fermented drinks. Recipes created by the talented Chef Melissa will focus on making use of tropical fruit while its at the height of its season and the exotic flavors of tropical spices, such as lemongrass, kafir lime leaves, cuban oregano, cranberry hibiscus, and allspice. Chef melissa will guide us through each recipe as we make it as a group. Leave the workshop with a 16oz jar of each item we make and a printed syllabus full of useful information and references for your future summer preservation projects at home. 

Recipes we will be making or demonstrating: 
Fermented mango chutney
Tropical fruit scrap vinegar
Jackfruit curd
Spiced simple syrup
Sapodilla brew (a very unique fermented beverage)

Just buy this web item now, mark your calendars, and keep an eye out for an email from us later with more information, including a list of items you'll need to bring (don't worry, its not much... a knife, cutting board, drinking water, etc.) The workshop will start at 10am and we are so excited to be having it in the ultra tropical courtyard at Gramps Bar, in Wynwood. After the workshop Gramps will fire up their new pizza oven so anyone who needs lunch can stay for a slice.
