Joi Choi is one of our favorite asian greens to plant in our customers gardens or grow at the farm because it’s basically bulletproof. This white stemmed Choi variety makes firm upright 12-15” tall heavy plants with dark green leaves and thick juicy white stems. All Bok Chois are heat tolerant enough to grow through our whole annual veggie season (October - May) so if you’re short on space consider either starting or ending your season with patches of asian greens like this one, before or after your lettuce patch goes in (or comes out). Bok Choi & Pac Choi are super versatile in the kitchen, they’re very similar to swiss chard or spinach, and many varieties are actually marketed as “Asian spinach” to make them seem more normal for the average American diner.
