The tart, lemony flavor of both green & red veined garden sorrels is due to the presence of oxalic acid. Their tangy flavor makes them a welcome addition to salads and their ornamental look makes them easy to use in almost all plating applications especially when young. Rich in vitamin C, sorrel was valued for centuries for its ability to prevent scurvy, a serious, even life-threatening problem when fresh fruits and vegetables were not available. Grow your sorrel in small bunches, as we do, for a bushy planting from which you can continually harvest leaves at any size. Plant yourself 4 per square foot and have a “patch” of sorrel from which you can continually harvest young tender leaves.
