Spigariello is an heirloom variety that we buy from a fancy Italian seed importer and we grow the heck out of it at our farm and in our gardens. It has surpasses the basic curly & dinosaur kales as our number one most favorite high producing delicious beautiful kale variety! We cant say enough good things about this kale broccoli hybrid with a sing song name. One reason why we love spigariello is because the plant grows leaves from many shoots, instead of just from one growing tip like a normal kale. That means that in the same square footage it makes about 3 times as many leaves. Also, because spigariello leaves are harvested a bit smaller and have more slender ribs (stalks) they don’t need to have those removed before eating, so you can just harvest a bunch of leaves and use them whole to top a wood fire pizza or chiffonade them into ribbons for sautéing or including in a quiche.
